The reason I am telling you this is because I am not classically trained, my techniques are a combination of helping my mum, watching episodes of come dine with me and playing cooking mama on my nintendo ds. Jollof Quinoa
(The African Quinoa, Heavy on the Noir)
Ingredients
- Quinoa
- Tomatoes
- Red bell pepper
- Onion
- Ginger
- Garlic
- Chicken broth
- Olive oil
- Tomato paste
- Maggi/Knor
- Thyme
- Cayenne pepper
RECIPE
- Wash quinoa and set aside.
- Place tomatoes, bell pepper, ½ of onion, ginger, garlic, and vegetable broth in a high-speed blender and process until smooth.
- Pour the liquid mixture and vegan bouillon into a saucepan over medium-high heat, and bring to a boil. Reduce heat to low and simmer for about 10 minutes. Set aside.
- Heat oil in a large saucepan, add the remaining onion, and saute until soft, about 2 minutes.
- Stir in tomato paste, curry powder, thyme, and cayenne pepper, and cook until fragrant.
- Add quinoa and stir to coat. Stir in the reduced liquid and add salt to taste.
- Bring to a boil, then reduce heat to low and simmer for 20 minutes.
Cheesecake

Ingredients
- Digestives biscuit
- White chocolate x2
- Butter
- Cream cheese x2
- Mascarpone x2
- Caster sugar
- Double cream
- Vanilla extract
Recipie
- Break up biscuit into crushed pieces
- Place butter in a cup and microwave to melt
- Add the butter to the crushed biscuit and mix
- Spread the biscuit in the serving bowl to create a flat base layer
- Place this in the freezer to harde
- Place cream cheese, mascarpone, melted chocolate, gelatin (3 tbsp), vanilla extract and sugar in a bowl and mi
- Whisk the double cream and then add to the mix
- Take the serving bowl out of the freezer and add the cream mixture
- Put the bowl back in the freezer and sit for at least 4 hour
- Take it out and add another light layer of crushed biscuits on the side, place in the freezer for another hour
- Now serve
